Fish Traceability and Authenticity

This chapter first reviews the traceability issues and technologies to be used all along the fish industries. Also, both the current analytical methods for the control of seafood traceability and authenticity and the emerging methods are detailed. Current species authentication methods include protein-based methods, such as IEF or ELISA, and DNA-based methods that were used by most control laboratories, such as DNA sequencing and real-time PCR. Emerging technologies include different approaches such as the development of quick DNA-based methods, like microarrays, isothermal amplification or mass spectrometry. Finally, a review of the development of methods for identifying fishing areas, distinguishing between wild and farmed fish, or frozen–thawed fish products is addressed. The needs and developments of methodologies (e.g. on-site methods to improve traceability and authenticity for fish industries) are also tackled.
