Additional indicators as a complement to the EUROP system. Proposition d'un complément au système EUROP

This study is based on a publication in Livestock Science (2017) 202: 44-51 and in a chapter of the book “La Chaîne de la Viande Bovine – Production, Transformation, Valorisation et Consommation de la viande bovine” to be published by Lavoisier editions. The aim of this study was to propose an additional set of indicators as a complement to the EUROP system, to characterize beef carcasses in slaughterhouses in a more precise way. The EUROP system includes only 4 indicators (category of animal, conformation score, fat score and hot carcass weight). The complexity of the carcass and the multiple interests of stakeholders in the production chain are consequently not considered. A scientific inventory (142 articles from 2010 to 2015) identified 89 operational candidate indicators in slaughterhouse, i.e. without significantly disrupting the slaughter chain and without depreciating the value of the carcass. These indicators were organized according to a hierarchical structure by the authors’ appraisal to select them. Indicators were selected based on the hierarchical structure according to their citation ranking in the literature and by ensuring that they were not redundant to the EUROP system and between them. Finally, a set of five indicators is proposed: hindquarter weight, meat colour, retail-cut yield, rib-eye area and marbling score. . L’étude présentée ici repose sur un article publié dans Livestock Science (2017) 202 : 44-51 et sur un chapitre de l’ouvrage « La Chaîne de la Viande Bovine – Production, Transformation, Valorisation et Consommation de la viande bovine », à paraître aux éditions Lavoisier. Elle avait comme objectif de proposer un jeu d’indicateurs complémentaires au système EUROP, afin de caractériser plus précisément les carcasses bovines en abattoir. Le système EUROP contient seulement 4 indicateurs (catégorie de l’animal, conformation, état d’engraissement et poids de la carcasse chaude) qui ne permettent pas de prendre en considération la complexité de la carcasse et les intérêts multiples des différents acteurs de la filière viande. Une revue scientifique (142 articles publiés entre 2010 et 2015) a permis d’identifier 89 indicateurs candidats applicables en abattoir, c’est-à-dire sans désorganiser significativement la chaîne d’abattage, ni engendrer une dépréciation de la carcasse. Ces indicateurs ont été classés selon une structure hiérarchique réalisée à partir de l’expertise des auteurs, en vue d’en faire une sélection. La sélection des indicateurs retenus s’appuie sur leur fréquence de citations dans la littérature et sur la classification hiérarchique, en évitant les redondances entre ces indicateurs et ceux du système EUROP. Au final, un jeu de 5 indicateurs a été sélectionné : le poids du quartier arrière, la couleur de la viande, le rendement de découpe commercialisable, la surface de noix de côte et la note de persillé.
