International audience. Enniatins produced by Fusarium species belong to emerging mycotoxins commonly found in cereals and raising concern for food and feed. They are potentially toxic to humans and therefore represent a public health issue. However, due to the lack of toxicokinetic and toxicodynamic data that could be used to derive a Health-Based Guidance Value, enniatins are not regulated at the European level [1].
